This weekend I made something from Pinterest - Jalapeno Popper Grilled Cheese! A-Mazing! If you like poppers you MUST MUST try this. I got pre-sliced french bread, spread a little cream cheese on, used canned Ortega diced jalapenos, Tillamook cheddar and my dusty trusty panini press. It was great with tomato soup. Yum yum yum. I didn't tell Eric the secret ingredient until after he took a bite and the look on his face was so gratifying. I know he will request that one again.
Last night I also made homemade mac and cheese which was inspired by the crock pot mac and cheese that's been floating around Pinterest. I had some veggies that needed to be used up so I threw in some pureed squash and added broccoli to my pasta while it was cooking. Then just baked it for about 45 minutes. I thought it was really good, but Eric wasn't a huge fan of the eggy-ness. I think it would have been just fine without the egg so I might skip them next time.
Tomorrow will be the end of 3 weeks of exercising every day for 30 minutes. Today I left the house at 6:45am and didn't get home until after 8pm. Thankfully I had gotten up early and squeezed in a 20 minute yoga workout before I got in the shower. Then tonight when I got home it was definitely too late to get my heart rate up much so I searched on You Tube for a short PM yoga routine and found this one, which was so good I ended up doing most of part 2 as well for a total of 24 minutes - yeah!
Speaking of yoga... has anyone ever seen this list of "potentially harmful and dangerous spiritual practices?" That will make you stop and think.
This week Seth started saying "apple." He obsessively signs "cracker" every chance he gets from the minute he wakes up until he lays down for bed. I need to teach that boy some new signs!
